Recipe Wednesday – Chubby Chicken and Cream Cheese Taquitos

Another week, another easy and yummy meal!  This one has a Mexican feel to it and is really incredible, especially given how little time it takes to make!

I made these Chubby Chicken and Cream Cheese Taquitos which are phenomenal.  I didn’t have any spinach on hand so didn’t include it and used the cheese I had in the fridge.  Know that the recipe makes A LOT of filling — I filled up an entire package of tortillas and used 3-4 of another package (so I think that’s about 15 taquitos?).  Frying them up isn’t hard at all and makes the shells so delicious.  This is definitely a recipe that you should try!

I also mixed up a Mexican rice hack that’s not like restaurant rice but is healthier and still good.  I just cooked some Minute Brown rice and then once it was cooked added a can of diced tomatoes and a drained can of corn and cooked it all for about five minutes.

This is great and easy weeknight family meal.  It would be even easier if you mixed the chicken and cream cheese mixture up earlier in the day and stick it in the fridge!

Recipe Wednesday – Maple Pecan Chicken and Balsamic Roasted Carrots

If you’ve noticed, Recipe Wednesday has morphed into a place where I share recipes that I’ve tried and are really worth sharing.  I had a sweet friend text me in November and ask me how many of the recipes on my Pinterest “Recipes” board I had actually made.  She was seeing lots of good recipes but wanted to know which ones were tried and true and which were still up in the air.  I thought it was a great question and so created a new board, “Recipes I’ve Made and Love” and tried to move those recipes that I’d made on to that board.

So in the spirit of sharing and trying to help those of you who dislike having to figure out dinner every. single. night. like me I’ve been sharing recipes that I have made and that were hits at our house.  I hope they’re helping you in your meal planning!  And, to be respectful of those who created the recipes or originally shared them, I’m simply linking to their posts and encouraging you to check out their blogs to get the full recipes.

On to today’s meal, Maple Pecan Chicken and Balsamic Roasted Carrots (with a baked potato).  We do chicken a lot at our house because we know that Charlotte will usually at least eat a few bites no matter what way it’s cooked.  When I saw this Maple Pecan Chicken recipe on Whitney’s blog I knew that (1) it looked easy and (2) it looked good so I wanted to try it.  The only thing that I did differently is that I always filet my chicken breasts instead of pounding into a certain thickness.  You get the same result but I find filleting the chicken easier and less messy.

We rounded out the dinner with Balsamic Roasted Carrots and a baked potato.  And it turned into a great, easy meal!

Recipe Wednesday – The Pioneer Woman

A few weeks ago I was feeling ambitious so I set out to make a couple Pioneer Woman recipes.  Now, if I’m honest, I’ll tell you that I don’t often attempt PW recipes because they often have so many steps and seem to take a while.  Don’t get me wrong, they’re always fantastic, but I don’t usually want to spend over an hour cooking (or, over 15 minutes).  But on this day I felt like doing some real cooking.

First, the kids helped me make her Homemade Applesauce.  A corer would have helped speed up the process immensely but it still didn’t take too long and the kids enjoyed throwing the apples in the pot.  And the result? Well, it’s basically apple pie filling that is called applesauce so I consider that a major win!  Just for your notes though, I was only able to fill up 2 1/2 medium sized jelly jars (think Smuckers) from one recipe of 10 big apples so keep that into consideration.

After I made the applesauce, I decided to substitute the applesauce for the apples in her Pork Chops with Apples recipe.  And let me just say that this recipe was divine.  Her recipes might take a lot of work but the result is definitely worth it!

Recipe Wednesday – Sesame Chicken

Sesame Chicken

On New Years day we made a Sesame Chicken recipe that I had seen on Pinterest.  In an effort to share those recipes that I’ve actually made and not just looked at on Pinterest, I want to make sure and share this one with you because it was fantastic!

The recipe is very easy to follow even if it is a little messy due to the frying of the chicken.  But the end result is divine.  You almost feel like you’re eating at a Chinese restaurant only you know exactly what you’re eating!  We did make a few changes to the recipe.  We used some Minute Brown rice and then “fried” it in some oil and added some soy sauce after it was cooked.  It gave the chicken a great base.  Next time we’ll probably add a scrambled egg and maybe some veggies to make the fried rice even more authentic.  We also decided that next time we will definitely make more sauce, if not more chicken.  Everyone in our family loved it (a rarity) so we want to make sure we have enough next time!

Recipe Wednesday – Christmas Party Edition

We hosted a Christmas Party last week for friends and I wanted to share some of the recipes that I made.  Most of the food was catered but I did contribute a few things!

White Chocolate Covered Cranberries

Tips:
These were very hard for me to dip into the chocolate before my white chocolate started burning.  So I ended up just mixing them all into the chocolate and then breaking them apart.  Not the prettiest, but they still tasted good.  My kids loved them so this might be a good way to get the superfood in them with just a little chocolate!

Georgia Pralines

Tips:
A very easy recipe that is really good.  I might use more pecans next time because my pralines seemed to be light on the pecans.  And I think I let them cool too much in the pan before putting on the wax paper to cool because mine didn’t fall into what I think of as the typical praline shape.

Sugar Cookie Cheesecake Bites

Tips:
I made this in regular sized muffin pans and in a mini muffin pan and I preferred the small ones.  The small ones were especially good for a party because you could pick one up and pop the whole thing in your mouth.  In the mini cups you will probably only use 1/4 to 1/3 of a thin slice of dough for the bottom.  I ended up rolling my dough into a ball and then pressing it into the bottom of the cup with my thumb.  Even with that small amount of dough you might have to tap the pan to the oven top to have the dough fall down into the cup so that you have room to put the cheesecake.  These really were a hit though and look way nicer than they actually are!

White Chocolate Cinnamon Sugar Pretzels

Tips:
Another HUGE hit that got rave reviews.  It’s a fairly straightforward recipe that I did basically as directed and they turned out great.  Just be prepared that you will have a lot of sugar come off as the pretzels sit so be prepared for a mess on your counter!

Edamame Salad

Tips:
I didn’t try this but saw a lot of people eating it at the party.  I think it was good for a healthy-ish dish on the table although I was disappointed in how it presented.  Maybe it needed more cranberries and feta?

Black Bean and Red Pepper Salad

Tips:
This recipe was hard because it called for the avocado to go in right before serving which put me in a tizzy right before guests arrived.  But I don’t think I should have worried as much.  With the lime juice in it, my avocado’s are still green even the next day in the salad so I wouldn’t worry at how much time it too much before serving to add the avocado’s.

Vegetable Dip

Tips:
This veggie dip was great and was very easy!

Recipe Wednesday – Sesame Teriyaki Turkey Tenderloin

Sesame Teriyaki Tenderloin

Over the summer I stopped eating beef because of some health issues and so to replace it I turned to ground turkey and then got in to turkey tenderloin’s.  I have found them to be very good and a great alternative to beef.  Plus, I feel like we’re being a little healthier not eating as much red meat.  I used to cook pork tenderloin’s often but since we started trying turkey I’ve found that the turkey tenderloin’s are more flavorful and taste better.  Last week I had a tenderloin and needed something to do with it and I’ve recently been wanting Asian influenced meals.  So I put together this recipe and we all really enjoyed it (except James who basically only eats crackers and fruit right now).

Note: I use Lawry’s marinade’s in general.  The two mentioned here are great marinades and work well for other meats as well.

Skillet Corn Garden and Gun

Not only did we serve this over rice but also with the Cast-Iron Charred Corn from Garden and Gun.  A wonderfully delicious recipe that is easy to make!
